Vegetable pasta salad

I can no longer remember where I got this recipe from but I have made it a couple of times for work lunches or picnics. It is a nice change from sandwiches but also light, and not strongly flavoured which can be ideal for a summer work lunch.

Ingredients:

  • Cooked pasta
  • 2 tomatoes, chopped
  • 1 capsicum, sliced
  • 1 red onion, sliced 
  • 1 cucumber, sliced
  • 1 c green beans, halved
  • 1 c carrot, chopped
  • 1/4 c olives, halved
  • Salad dressing (I use a spicey vinaigrette) 

Method:

1  Combine cooked pasta with all other ingredients in a bowl and then mix through with your choice of dressing. 

This can be stored in the fridge for up to 4 days.
